Dashi Ponzu Soy Sauce

Dashi Ponzu Soy Sauce

This is a Ponzu Soy Sauce blended with dashi. Subtle tartness and umami from dashi matches well with meat dishes, hot pot, gyoza and grilled fish.

Ingredients (2 servings)

100g onion, finely chopped
Grated daikon, drained, as needed
2 tbsp breadcrumbs
2 tbsp milk

200g ground beef
1/2 egg
Salt, small amount
Ground black pepper, small amount
Dashi Ponzu Soy Sauce, as needed
2 leaves shiso
Vegetable oil, as needed

Directions

Heat the oil in a pan. Sauté onion until soft and let it cool.

Soak the breadcrumbs in milk.

Knead (1), (2) and (A) in a bowl very well. Divide into two equal parts and make round shapes.

Heat the oil in a pan and fry (3) until browned on one side. Flip it over and reduce heat to low. Cover, and steam fry until the juice runs clear. Use a fork or skewer to pierce the meat.

Serve on a plate top with shiso leaves and grated daikon. Drizzle with Dashi Ponzu Soy Sauce.
