Egg Drop Soup with Maitake Mushrooms

Dashi Soup Base

Concentrated type made with light-colored soy sauce, so the colours of the ingredients are not lost.

Ingredients (2 servings)

50g maitake mushrooms, stemmed and separated
1 egg, beaten
A
2 tbsp Dashi Soup Base
270ml water
Chopped green onion, optional

Directions

Bring (A) to a boil in a pot. Add maitake and cook for more. Turn the heat down to simmer.

Grab the chopsticks and hold them pointing down in the center of the pot. Slowly pour the egg on the chopsticks into the soup in circular pattern. Once cooked, turn off the heat.

Ladle the soup into the bowl and sprinkle green onion (optional).
