Iriko Dashi Vinegar

Iriko Dashi Vinegar is a mellow seasoned vinegar full of umami with a crisp, clean taste. Dried sardines from Kagawa Ibuki Island and Hokkaido Rishiri kombu are perfectly mixed with refreshing apple vinegar and smooth rice wine vinegar.

Ingredients (2 Servings)

400g chicken thigh, scored
100ml Iriko Dashi Vinegar
Baby greens, optional
Tomatoes, optional
Vegetable oil, as needed

Directions

Heat the oil in a pan. Sauté chicken thighs with skin side down until it is golden. Flip the chicken and lower the heat. Cover and sauté until cooked through.

Wipe off excess oil in the pan. Add Iriko Dashi Vinegar and cook until the sauce is thickened.

Cut (2) into thick slices. Arrange them on a plate with baby greens and tomatoes (optional).
